Freezing has long been established as an excellent method for preserving high quality in foods. Freezing preserves the taste, texture and nutritional value better than any other method. The method we use is IQF and that does not allow large ice crystals to form in vegetable cells. Also, since each piece is individually frozen, particles do not cohere, and the final product is not frozen into a solid block.
